Ingredients
- 3 cups fresh spinach leaves, torn into bite-size pieces
- 1 cup radicchio leaves, torn into bite-size pieces
- 1 lb Just BARE® Boneless Skinless Chicken Breast Fillets, cooked, salt and peppered, shredded
- 4 strips bacon, cooked and crumbled

2 cups cooked wild rice
- 1 Honeycrisp apple, skin on, cored, diced
- 2 oz goat cheese, crumbled
- 1/3 cup shelled, salted pistachio nuts, chopped
- ¼ cup chopped fresh mint
- Dressing (whisk together):
- 1/3 cup canola oil
- 3 tbsp apple cider vinegar
- 1 tbsp each: honey and Dijon mustard
- ¼ tsp each: salt and Japanese 7 Spice
Directions
In large bowl, combine ingredients. Add dressing; toss.
